A banana bread recipe (GF, Vegan)

Dry ingredients:

1 cup of buckwheat flour

½ cup of oat flour (blended rolled oats)

½ teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

¼ teaspoon salt

Wet ingredients:

3 blended bananas

2 flax eggs (2 tablespoons ground flax seeds + 6 tbsp water combined in a bowl and left to sit for at least 5 mins)

1/4 cup melted coconut oil

1 tsp vanilla extract

1/4 cup maple syrup

1/3 cup almond milk (or plant based milk of choice)

Optional Add-ins

Nuts (walnuts, pecans)

blueberries

chocolate chips

Equipement needed:

baking tin

baking paper

blender, food processor or bowl for smashing bananas

1 large bowl for mixing

1 small bowl for flax eggs

Method

Preheat the oven to 180°C. Line a baking tin with baking paper.

In a large bowl, combine the buckwheat flour, the baking soda, baking powder, cinnamon and salt.

If your flaxseeds aren’t already ground, then place two tablespoons of whole flaxseeds into a small blender and blend. Once they have been ground, place them in a small bowl with six tablespoons of water and set aside.

In the same blender, place ½ of rolled oats and blend, unless you already have oat flour. Place the oat flour in with the rest of the dry ingredients.

Break up your bananas and place them in the blender, or in a separate bowl with the rest of the wet ingredients, including the flax eggs. If you do not have a blender, then in a separate bowl, mash the bananas with a fork and stir in the rest of the wet ingredients. Blend or mash the ingredients until you have a smooth liquid (or semi-liquid consistency). Add the blended wet ingredients into the dry ingredients and fold them in until you have a smooth batter. If it is too dry, add some more almond milk. At the point you can add anything else you’d like—I added pecans because I love the maple pecan flavour combination—but you can add any other nut, berried or even chocolate chips!

Pour the batter into the paper lined baking tin and place it in the oven for about 40 minutes. Once it is cooked, remove from the oven and let it cool. Serve with whatever you’d like, and eat it whenever you’d like!
